Domaine du SOMAIL
The vines of the Domaine du Somail are planted on land in the commune of Bize-Minervois: 18 hectares spread between the Belvèze plateau and the Garde. The first wine was made in 2006, grape variety by grape variety, and parcel of land by parcel of land, with a (small) yield of 35 hectolitres per hectare.
The harvested grapes are initially de-stalked and graded, and then the wine making process takes place in small capacity tanks, with regulated temperatures. The care given to the vine, the work on the soil, and small yields, combine to translate the wish of this wine maker to pick perfectly ripe grapes, full of sun.

Olivier Fabre set up in business in 2003 as a young farmer, after studying wine production and oenology. His work and his passion have allowed him to succeed as a tour de force. Indeed, he produces a very good wine, offered in three varieties of red, rosé and white, as well as two top of the range blends, aged in oak barrels: Petit Pierre (Merlot & Cabernet grapes) and Authentique (Mourvèdre only).
